Turkey & Peppers over Cauliflower Rice
As simple as this meal is, you guys are going to want more. This meal reminded me of Thanksgiving dinners at my Auntie’s house because she always made the best dirty rice. Even though this is NO WHERE as good as hers, it still hits the spot for the calories.

Turkey & Peppers over Cauliflower Rice
A savory dish with plenty of flavor that leaves little to no room for seconds but doesn't break the calorie bank.

Ingredients
- 1 Large Bell Pepper
- 1 Large Onion
- 1 Sweet Bell Pepper
- 5 cups Cauiflower Rice
- 1 lb of 93% Lean 7% Fat Ground Turkey
- 1 tbsp Unrefined Coconut Oil
- 5 cloves of Garlic
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Dried Thyme
- 2 tsp Garlic Powder
- 1/2 tsp Sea Salt
- 1/2 tsp Dried Oregano
- 1/4 tsp Black Pepper
- 1/4 medium hass avocado (optional)
Instructions
- On a skillet, add one tbsp of unrefined coconut oil and bring the heat to medium-high
- Add your seasonings to the ground turkey and continue to cook
- Chop your garlic cloves, onion, and bell peppers
- Once ground turkey is 80% done with little pink showing, toss your chopped veggies and cook until the veggies are fragrant and onions are translucent
- Add 5 cups of cauliflower rice and sprinkle sea salt and black pepper and stir
- Cook the mixture until cauliflower has softened
- Serve into 5 containers.
Saphia’s Tips:
- It is easy to over cook your cauliflower so be sure to only add the “rice” at the end only cook until softened.
