Coconut Flour Pancakes
Breakfast is my favorite time of the day. My favorite restaurant is IHOP. Ever since I have been practicing a healthy lifestyle, IHOP Is something I had to stop indulging in because let's face it. Those Buttermilk Pancakes aren't good for anything but those taste buds.
These pancakes don't make me feel like I'm missing out on anything and the texture is very close to the real thing. Next weekend, give these a try with some sugar free syrup or homemade fruit puree, which is my personal favorite to top on my pancakes.

Coconut Flour Pancakes
A low carb coconut flour pancake recipe that actually isn’t dry.

Ingredients
- 1/4 cup Coconut Flour
- 2 Large Eggs
- 1 tsp Pure Vanilla Extract
- 1/8 tsp Sea Salt
- 1/2 tsp Baking Powder
- 5 drops of Liquid Stevia
- 1/2 cup Unsweetened Almond Milk
Instructions
- In a large mixing bowl, add all of your dry ingredients and stir until well combined
- Add one egg at a time and mix until well combined
- Mix in the liquid stevia, unsweetened almond milk, and vanilla extract
- Scoop 1/4 cup of batter for each pancake
- Serve with your favorite choice of syrup or berries and ENJOY!

- Once the batter is made, let it sit for 5-10 for the best texture.
- Add a lid while cooking each side to ensure it cooks thoroughly
