Egg-less Banana Bread

Believe it or not, banana bread wasn’t something I grew up. Shocking right, my beginning banana bread experience came from the pastries & treats that the pharmaceutical reps would bring to the office when saying their pitch, if you will. When I tried it, all I remember was saying, “it’s so soft but, I taste more sweet sugar than I do banana. Ever since, it was my first choice of sweet breads I would go for.

It wasn’t until recently, I found myself with 5 bananas very very clears throat ready, & I was saying to myself “How am I going to use these up before they actually are just unsavable?” I started looking up what to do with bananas that could be like a snack for the week for my husband & I. Especially because my husband & I both have a sweet tooth. I found banana bread & was on the fence at first because of the amount of sugar some the recipes were calling for & I honestly didn’t want to do a lower carb snack because this will be for both us not just me.

I took some notes & suggestions & got to work. My first try, I noticed it had banana flavor but was just a bit too dry for my liking, the second time around I found the secret was using a liquid sweetener & while I saw alot of recipes calling for pure maple syrup, I did want to try to stay low on the sugar end as much as possible. I found that applesauce was a great substitute. I remember my dad always telling me my late grandmother would use unsweetened applesauce for when she would make cakes for individual’s who were requiring a cake that was insulin resistant friendly.

Now you can most definitely add an egg in here instead of the chia seeds. The reason why I ended up making an eggless one was because I ran out of eggs & I couldn’t run to the store at the time. If you want to use an egg instead, go for it! I have never tried it before myself with this recipe so I am unsure how the texture would be.
