Oatmeal Bites

Being on a low carb diet means you have to give up a lot of grains and starchy foods. One thing I missed having was oatmeal, it is such a comforting food. One day while I was working at my day job, someone stopped by and dropped off some cookies and they were oatmeal cookies, they were called Alyssa’s Oatmeal Bites, as soon as I had them, i automatically fell in love, the ingredients on the package were so simplistic and clean. I had them to make my own version.

I have made these bites countless times to ensure the best texture and flavor. I published it on my YouTube Channel. I figured I might as well post it on here as well.

While making this recipe, a couple of things I have noticed is using parchment paper of course is the easiest way to keep mess to a minimum when baking these. As they are baking they wont swell up that much so you don’t have to worry about spacing but you space them out about an inch apart. This is definitely a perfect little sweet treat for in between meals to keep your sugar craving to a minimum.

Oatmeal Bites

These bites will kill any sweet tooth in between meals and also consume a good percentage of the daily recommendation of fiber.

Ingredients

Instructions

  1. Preheat oven to 350 F 
  2. Grind 32g of oats in a food processor until it turns to flour.
  3. Grab a large mixing bowl and mix all your dry ingredients.
  4. Add your wet ingredients which includes the banana, vanilla extract, and coconut oil.
  5. Mix your dry and wet ingredients together. The mixture should end up like a sticky and light firm consistency.
  6. Line a 15 x 10 cookie sheet with parchment paper onto a baking dish.
  7. Using a cookie scoop (preferably a 1 ½ Tbsp) start placing your cookies on the pan at least an inch apart. 
  8. Use your silicone spatula and a little finger action to flatten the cookie just enough to make it leveled.
  9. Place in oven for 15-18 minutes or until golden brown edges.
  10. Once done, place bites on a cooling tray for 10 minutes to allow to firm.
  11. Enjoy!
