Low Carb Apple Pie

The holidays may have passed but who said you can only have pie twice out the year.

This an apple pie recipe that I did share with my family on Christmas eve and they all very much enjoyed it so I thought to myself…I have to share this with the world! How easy a low carb apple pie really is and the best part is…you are using real apples!

I have seen so many low carb/keto apple pie recipes on the internet and none of them use actual apples. Most of the keto apple pie recipes I’ve seen used squash. if you are someone trying to say keto then of I would understand why you wouldn’t use apples but personally that kind of defeats the whole purpose of having an apple pie.

This pie may not be keto but it definetly is low carb and then only sugar you are consuming is coming from the apples itself.

Ingredients

Instructions

To prepare the crust
  1. Pre-heat the oven to 360 degrees
  2. In a large mixing bowl, add the almond flour, coconut oil and mix together
  3. Add liquid Egg Whites, coconut flour, granulated stevia and mix in
  4. Once you have a dough, grab a large piece of parchment paper to prevent sticking on the counter
  5. Using a rolling pin, place another piece on parchment paper on top of the ball of dough and roll out the dough a quarter inch thick
  6. Remove the top parchment paper, grab a knife or sharp kitchen safe object and cut a large circle into the flatten dough to create a pie shape, save the edges for later
  7. Place your pie pan upside down on the crust and with your hand, life underneath the pie crust and flip it right side up gently to prevent breaking the pie crust
  8. If there any edges that are empty then take any extra pie crust from the other side and push it in to create an even layer of crust all around
  9. Place in oven for 10 minutes
  10. Grab the leftover dough and roll it out into a rectangular shape
  11. With a sharp item or knife, make 1/2 inch wide strips to make the lattice for the pie
Filling
  1. Pre heat the oven to 360 degrees
  2. In a large sauce pan, at medium heat, add the coconut oil, brown sugar alternative, sugar-free syrup, water and stir thoroughly
  3. Chop up the apples into diced medium sized pieces
  4. Toss the apple pieces into the pan with the syrup mixture and stir until all pieces are well coated
  5. Sprinkle cinnamon, nutmeg and salt and mix it
  6. Once some on the liquid has evaporated, add the filling to the pie crust
  7. On top, add the lattice strips
  8. Bake the pie in the oven for 20-25 min or until the lattice is golden brown

Saphia’s Tips

  • Be sure not to let all the liquid from the filling evaporate out which can cause the pie to not bake together well
  • If you do cook all the liquid out the filling then when it is done baking let it cool for about 25 minutes to let it sit and it'll come together more
  • You do not have to add the cinnamon and nutmeg but it does intensify the flavor more
