Gingerbread Doodle Cookies (Grain-Free & Dairy-Free)

I have been planning to make these cookies for a long time now. Growing up, Gingerbread cookies was always my favorite because it was traditional to only have it during the holidays.

I was inspired to create this recipe because my husband mentioned to me when he was growing up, he didn’t necessarily have holiday themed food during the holidays. I said “what? Oh that just wont do.” While my husband isn’t on a weight loss journey, I did want to create a recipe that would benefit us of both greatly when it comes to it being nutritionally balanced.

Holiday themed food, specifically desserts have always been high in sugar which leads to most of having that “holiday weight gain”. I want to change the narrative with these classic & yearly loved favorites with a twist.

The whole family will love these, including the family members that just want to enjoy yummy desserts & not whether it’s “healthy” or not.

Gingerbread Doodle Cookies (Grain-Free & Dairy-Free)

A classic cookie recipe to all of my gingerbread lovers for years to come.

Ingredients

Instructions

  1. In Large bowl, add your coconut oil, sugar, syrup, & molasses. Beat the ingredients on high speed until it is creamy
  2. Add one egg at a time with the vanilla on high speed for another minute
  3. In a seperate bowl, add all of your dry ingredients & whisk slowly until well combined
  4. Once dough is sticky, divide in half & wrap each piece in plastic wrap
  5. Take one piece & flatten down into a disc shape that should be a quarter inch thick. Chill for 3 hours or overnight
  6. Preheat the oven to 350 degrees
  7. Flour your surfact to prevent sticking & roll out your piece & start cutting out your little ginger bread cookies. Combine leftover scrap as needed to use all of the dough
  8. Bake cookies for 10 minutes. Be sure to rotate the pan every 2 minutes or so
  9. Allow to cool for 5 minutes before digging in
  10. Drizzle some pre-made icing for fun & enjoy!

Saphia’s Tips

If the dough is too sticky then add a tsp of coconut flour until you get the consistency that is easy to manipulate with your hands.
