Sweet Potato Chocolate Chip Brownies

So sweet potatoes in brownies. Its a thing, don’t know when it became a thing but it is. I bet the most common question is why? I know that was my questions. Well to put it plain, not only are sweet potatoes sweet so it adds that extraness to the brownies, it is also a very common replacement for eggs & helps reduce the need for sugar.

I thought to myself, “you know, I’m going to give this a go! I have sweet potatoes that are about to be looking a little crazy.”

When I first went into this recipe, I thought that these were going to have the texture of “traditional” brownies but a little different. I think they are more appropriate to be called fudge squares. (maybe I’ll change the name)

I will say sweet potatoes are definitely a great replacement for eggs but you have to be mindful of the ratio between sweet potato, flour, & sugar of choice. I may have used a date “syrup” as the choice of sugar which was the right amount of sugar for my palette but I will say a dry choice of sugar would have been the better choice with sweet potatoes already being considered a wet ingredient. If you end up using a dry sugar instead, I would recommend using a third of a cup at first.

I’ll keep making hidden veggie treats, especially now that I am a whole momma, it would probably be a good idea to start now lol
