Gluten-Free Soft Tortilla Wraps

Burrito night has been my very night ever since I was young. It wasn’t just cost effective but it’s also just plain delicious. Being born into a family of 6, variety to fit everyone’s taste buds was a must. Luckily all of us were pretty much on the same page when it came to food but burrito night allowed us all to show out. One would be stacking their burrito up with cheese (they totally regretted it later), one was stacking that meat, another was stuffing with greens & loading the sauce. Can you tell I am reminiscing?

Of course as time goes on, our dietary intake may change due to tolerance & new health concerns. I’m not restricted to a gluten free diet but I happen to adopt a diet that is generally gluten free because I greatly limit my consumption of flour based foods & I bake majority with nut flours. Due to me making this change, I slowly stopped having tortilla wraps because majority of the leading brands are flour based. They do have corn tortillas but I personally try to be mindful of my carb consumption due to having PCOS that is heavily impacted by insulin (every person is different when it comes to symptoms, this is just what I personally experience).

One night, my husband suggested we should have burrito night. I immediately got excited but then I came to three realizations: one, low carb burritos are pricey & have a great amount of fiber that can cause me digestive issues after; two, cheap burritos have some yucky ingredients (yes, I said yucky); & three, gluten-free burritos doesn’t mean lower in carbs. What to do, what to do? Of course, being who I am, I decided that I was going to create my own.

The first thing you do is look up what does a tortilla actually have right? Then you swap out ingredients, fix some ratios & begin the experiment. The first time I made it, it was too soft, like watery. It just wasn’t crisping up. After a few tries & adjustments (& the power of raising the heat a tad bit), I found the texture & durability I was looking for! No, it doesn’t crisp up like a “traditional” tortilla wrap does but what I will say is, if you are someone looking for a gluten-free & low carb inexpensive tortilla wrap recipe, I like to say you found the right one. You can also use this as a flatbread as well.

Gluten-Free Soft Tortilla Wraps

Looking for a gluten-free & low carb inexpensive tortilla wrap recipe? I like to say you found the right one

Ingredients

Instructions

  1. Combine all dry ingredients, including seasoning, together & combine
  2. Add in water & mix until you get a lightly thick liquid consistency
  3. Chop up your spinach into smaller pieces & add it to your batter
  4. Set a pan on the stove on medium-high heat with some oil or ghee
  5. Add 1/4 cup of the batter into the pan
  6. Cook on each side for 3-5 or until it is a pale white color on top
  7. When you flip the wrap/flatbread, it should have patches of brown
  8. Once done, use it for dipping of hummus or with your favorite burrito meal
  9. Enjoy!

This wont crisp up like traditional wraps therefore be mindful of wet ingredients sitting in these burritos for too long
