Zesty Lunch Bowl
First off, who is the genius who made orange pepper seasoning? That's a joke—it was obviously Badia. Seriously, this meal is probably one of my most genius quick lunches I have made thus far. Now, I’m not tooting my own horn. It’s not fabulous, but it is pretty good.
You may be wondering, why I put tofu in my lunch? Am I suddenly becoming a vegan? No, I’m not a vegan, and I don't feel like you have to be a vegan in order to enjoy foods that one predominant diet preference consumes. I do not like to put food in a category—I say food is food, and I will enjoy it as such.
I was out of a pound of ground turkey. I meant to cook this meal with 2 pounds to make extra helpings, but I only had one pound of ground turkey. I thought, "Well, is this going to be enough?" Then I noticed I had a pound of tofu in my fridge and said, "Well, looks like I’m going to add this to my lunch bowl."
The orange pepper seasoning was more of an impulsive decision. I saw it in my local grocery store and thought, "This looks pretty good; I’ll add it to my lunch." I had some vegetables that were about to go bad and thought, "You know what? This looks pretty good, I’m going to have this with my lunch." And now, here we are.
